Apple Tea Cake

From the kitchen of Sally Hayes

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 tsp vanilla
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 cups peeled and diced apples
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°.
  2. Grease and flour a tube or bundt pan.
  3. Beat sugar, oil, eggs, and vanilla together until smooth.
  4. Sift together flour, baking soda, salt, and cinnamon; stir into the wet mixture (batter will be thick).
  5. Fold in the apples and pecans.
  6. Pour into the prepared pan and bake 60-70 minutes, until a toothpick comes out clean.
  7. Cool in the pan 15 minutes before turning out.
Card header listed "Apple Tea Cake" as a title alongside Potato Soup, but no recipe body for it was ever found on the card - this is a fully reconstructed standard apple tea cake recipe, not from Sally's card, per Matt's instruction to use best judgment since he doesn't have the original.
