Instructions
- Combine bran cereals and salt in a large roasting pan.
- Stir in boiling water and buttermilk; cool to lukewarm.
- In a mixing bowl, cream sugar and shortening.
- Add eggs one at a time, beating well after each addition.
- Stir in the bran mixture.
- Combine flour and baking soda; add to the dampened dry ingredients.
- Add raisins/dates and nuts if wanted.
- Store batter in the refrigerator until ready to use (keeps up to 4 weeks).
- Fill muffin tins lined with muffin papers 2/3 full.
- Bake at 375° for 20-25 minutes.
Makes about 60 muffins. Original amounts of 100% bran flakes, 3 cups sugar, and 5 cups flour were each corrected in the margin (to 40% bran flakes, 2 cups sugar, and 5 1/2 cups flour) - corrected amounts used here.
