Chicken and Spinach Casserole

Ingredients

  • 1 stewing chicken (about 5 lbs), cooked and cut up
  • 8 oz fine egg noodles
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup milk
  • 2 cups sour cream
  • 1/4 cup lemon juice
  • 2 tsp Lawry's seasoned salt
  • 1/2 tsp cayenne
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 pkg frozen chopped spinach, cooked and drained
  • 1 can mushroom pieces, with juice
  • 1 can water chestnuts, drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 1/2 cups grated Monterey Jack cheese

Instructions

  1. Cook noodles according to package directions.
  2. Melt butter, stir in flour, then add milk and cook until thickened.
  3. Remove from heat and stir in sour cream, lemon juice, and seasonings.
  4. Combine with the chicken, noodles, spinach, mushrooms, water chestnuts, onion, and celery.
  5. Pour into a greased casserole dish, top with the Monterey Jack cheese, and bake at 350° until bubbly, about 30-35 minutes.
