From the kitchen of Donna Florio (Southern Living, Dec. 2011, p. 192)
Ingredients
2 (6 oz) packages long grain and wild rice mix
1/2 cup butter
1 cup chopped onion
1 cup chopped celery
1 (8 oz) package sliced fresh mushrooms
2 (10.5 oz) cans cream of chicken soup
1 (8 oz) container sour cream
4 cups chopped cooked chicken
1 (6 oz) can sliced water chestnuts, drained
2 cups shredded sharp cheddar cheese, divided
1 cup sliced almonds
2 cups soft breadcrumbs
Instructions
Prepare rice according to package directions.
Melt butter in a large skillet; saute onion, celery, and mushrooms until tender.
Stir in soup and sour cream.
Add chicken, rice, water chestnuts, and 1 cup of the cheese.
Spoon into a lightly greased 15x10-inch baking dish (or 2 smaller 11x7-inch dishes).
Sprinkle with the remaining 1 cup cheese, the almonds, and the breadcrumbs.
Bake at 350° until bubbly and golden, about 25-30 minutes.
Card is cut off right after specifying the baking dish size; the final baking step was reconstructed using standard technique for this type of casserole.
