Chicken and Wild Rice Casserole (Southern Living)

From the kitchen of Donna Florio (Southern Living, Dec. 2011, p. 192)

Ingredients

  • 2 (6 oz) packages long grain and wild rice mix
  • 1/2 cup butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 (8 oz) package sliced fresh mushrooms
  • 2 (10.5 oz) cans cream of chicken soup
  • 1 (8 oz) container sour cream
  • 4 cups chopped cooked chicken
  • 1 (6 oz) can sliced water chestnuts, drained
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup sliced almonds
  • 2 cups soft breadcrumbs

Instructions

  1. Prepare rice according to package directions.
  2. Melt butter in a large skillet; saute onion, celery, and mushrooms until tender.
  3. Stir in soup and sour cream.
  4. Add chicken, rice, water chestnuts, and 1 cup of the cheese.
  5. Spoon into a lightly greased 15x10-inch baking dish (or 2 smaller 11x7-inch dishes).
  6. Sprinkle with the remaining 1 cup cheese, the almonds, and the breadcrumbs.
  7. Bake at 350° until bubbly and golden, about 25-30 minutes.
Card is cut off right after specifying the baking dish size; the final baking step was reconstructed using standard technique for this type of casserole.
