Chinese Chicken

From the kitchen of Sally Hayes

Ingredients

  • 2 cups cooked chicken, cubed
  • 1 cup celery, diced
  • 1 cup rice, cooked
  • 3/4 cup mayonnaise
  • 1 cup fresh mushrooms, diced
  • 1 tsp lemon juice
  • 1 tsp salt
  • 1 (10.75 oz) can cream of chicken soup
  • 1 (4 oz) can water chestnuts, drained and sliced
  • 1/2 cup butter, melted
  • 1/2 cup slivered almonds
  • 1 cup corn flakes

Instructions

  1. Preheat oven to 350°.
  2. Mix all ingredients except the butter, almonds, and corn flakes; pour into a 2-quart casserole.
  3. Melt the butter, add the corn flakes and almonds, and sprinkle on top of the casserole.
  4. Bake until hot and bubbly.
  5. Serves 6-8.
Card notes: boil the chicken breast with celery, then use the broth to cook the rice. If you double the casserole, don't double the topping. Made for a luncheon for Karen White.
