Christmas Sausage Fondue

Ingredients

  • 1 1/2 lb pork sausage (Jimmy Dean, particularly good)
  • 2 Tbsp minced green onion
  • 1/4 cup minced pimento
  • Salt and pepper, to taste
  • 1 tsp dry mustard
  • 12 slices sourdough French bread, crusts cut off
  • 6 eggs, well beaten
  • 3 cups milk
  • 1/2 tsp salt
  • 2 tsp Worcestershire sauce
  • Grated cheddar cheese and paprika, for topping

Instructions

  1. Brown the sausage and add the green onion, pimento, salt, pepper, and dry mustard.
  2. Line a well-buttered 8x12 Pyrex dish with 6 slices of the bread (crusts cut off).
  3. Put the sausage mixture on top, then cover with the remaining 6 slices of bread.
  4. Mix the eggs with the milk, salt, and Worcestershire sauce; pour over the casserole.
  5. Cover with plastic wrap and refrigerate at least 12 hours.
  6. Bake at 325° uncovered for 1 hour 15 minutes, placing the dish in a larger pan of warm water while baking.
  7. During the last 30 minutes, top with grated cheddar and paprika.
Despite the name, this is a make-ahead breakfast strata, not a dip-style fondue.
