Country Ham

From the kitchen of Sally Hayes

Ingredients

  • 1 country ham
  • Brown sugar
  • Cornmeal
  • Cinnamon
  • Whole cloves

Instructions

  1. Soak the ham overnight.
  2. Cut the hock off.
  3. Cook covered with water, skin side up.
  4. Bake at 450° until it boils, then reduce heat to 300°.
  5. Simmer-cook 20 minutes per pound, or until it reaches 170° internally.
  6. Cool in the liquid 4 to 5 hours.
  7. Trim to 1/4" to 1/8" fat.
  8. Mix brown sugar, cornmeal, and cinnamon for the topping.
  9. Place cloves on top.
  10. Brown for 1/2 hour in a hot oven.
