Country Ham

Ingredients
1 country ham
Brown sugar
Cornmeal
Cinnamon
Whole cloves
Instructions
Soak the ham overnight.
Cut the hock off.
Cook covered with water, skin side up.
Bake at 450° until it boils, then reduce heat to 300°.
Simmer-cook 20 minutes per pound, or until it reaches 170° internally.
Cool in the liquid 4 to 5 hours.
Trim to 1/4" to 1/8" fat.
Mix brown sugar, cornmeal, and cinnamon for the topping.
Place cloves on top.
Brown for 1/2 hour in a hot oven.
