Instructions
- Melt butter in a Dutch oven.
- Saute celery, bell pepper, green onions, and garlic for 10 minutes.
- Add flour and blend well.
- Add water and blend well.
- Cook over low heat for a few minutes.
- Add crayfish (or shrimp) and parsley; cook 8-10 minutes over very low heat.
- While that cooks, prepare the noodles according to package directions.
- Add the cheese (cut into small pieces) and blend well.
- Add half and half and blend well.
- Salt and pepper to taste.
- Add milk.
- Mix the noodles with the crayfish mixture.
- Place in a buttered 3-quart casserole dish.
- Top with Parmesan cheese.
- Bake at 350° uncovered for 20 minutes, or until hot and bubbly.
Card suggests substituting cooked chicken, shrimp, lobster, or crabmeat for the crayfish, and adding sauteed mushrooms, artichoke hearts, peas, or water chestnuts. Best prepared the day before or that morning; save extra sauce to pour over the dish before serving or to moisten leftovers. Use a deep dish if you have one.
