Father Lee's Cheesecake

Ingredients

  • Crust: 20 graham crackers, crushed
  • 1/4 cup melted butter
  • 2 Tbsp sugar
  • Filling: 2 eggs
  • 3/4 lb Philadelphia cream cheese
  • 1/2 cup sugar
  • 1 tsp vanilla
  • Cinnamon, for topping
  • Topping: 3/4 pint sour cream
  • 1 tsp vanilla
  • 2 Tbsp sugar

Instructions

  1. All ingredients should be at room temperature.
  2. Preheat oven to 375°.
  3. Crust: crush graham crackers and add melted butter.
  4. Pat onto the sides and bottom of a pie pan.
  5. Bake, then cool.
  6. Filling: beat eggs thoroughly; add 1/2 cup sugar.
  7. Add cream cheese and vanilla; mix well.
  8. Pour into the crust and sprinkle cinnamon on top.
  9. Bake at 375° for 20 minutes.
  10. Cool, then add the topping.
  11. Topping: mix ingredients well and slosh on top of the filling.
  12. Bake at 400° for 5 minutes.
  13. Chill.
