Hot Loaf Dinner Bread

From the kitchen of Betty Weiler (via Sally Hayes)

Ingredients

  • 1 cup vegetable shortening (Crisco)
  • 3/4 cup sugar
  • 1 cup water
  • 1 1/2 tsp salt
  • 2 whole beaten eggs
  • 3 packages dried yeast dissolved in 1 cup warm water
  • approx. 6 cups bread flour (Gold Medal plain, added in 3 installments)

Instructions

  1. Dissolve shortening, sugar, water, and salt together in one pan on the stove.
  2. When cool enough, pour into largest mixer bowl and add the beaten eggs and the dissolved yeast.
  3. Add flour in 3 installments.
  4. Cover and refrigerate immediately; allow at least 2 hours.
  5. Then make into 2 or 3 loaves, kneading very little (no more than for regular rolls, since this is not meant to be sandwich-textured bread).
  6. Place in oiled bread pans, cover, and allow to rise approximately 2 hours.
  7. Bake at 350° for 5 minutes, then reduce heat to 300° for 40 minutes.
  8. Cool, seal in freezer bags, and freeze.
  9. Always heat before serving.
Contributor notes it's tastier and simpler to preslice, butter, wrap in aluminum foil (like French bread), and reheat before serving. Similar to a dinner roll or Sally Lunn bread.
