Mexican Casserole

Ingredients

  • 1 lb ground chuck
  • 1-2 cans pinto or chili hot beans
  • 1 onion, chopped
  • 1 package chili seasoning mix
  • 3 cups tomato sauce
  • 10 flour or corn tortillas
  • 10 oz shredded cheddar and/or Monterey Jack cheese

Instructions

  1. Mix ground chuck, beans, onion, and chili seasoning mix with 1 cup water; cook until thickened.
  2. Dip tortillas in tomato sauce.
  3. In a 13x9-inch pan, layer 5 tortillas, cover with meat mixture, then cover with cheese; repeat layers.
  4. Sprinkle with cheese on top and bake at 350° for 30-35 minutes.
Serves 6. May want to serve with salsa, sour cream, and hot peppers. Contributor notes she uses a little extra tomato sauce, spooning some onto the tortillas before the meat goes on.
