Mimi's Cafe Carrot Raisin Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp salt
  • 1 cup vegetable oil
  • 1 cup plus 2 Tbsp granulated sugar
  • 3 eggs
  • 3 Tbsp molasses
  • 1 tsp vanilla extract
  • 1 cup shredded carrot
  • 1/4 cup crushed pineapple
  • 1 cup raisins
  • 3/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350°.
  2. Combine flour, cinnamon, baking powder, baking soda, and salt in a large mixing bowl.
  3. In a separate bowl, using an electric mixer, combine oil, sugar, eggs, molasses, and vanilla.
  4. Blend shredded carrot and pineapple into the mixture, then add raisins and walnuts; mix well by hand.
  5. Pour the flour mixture into the carrot mixture and stir until combined.
  6. Pour batter into two greased 8-inch loaf pans.
  7. Bake 60 minutes or until done.
