Olive Cheese Balls

From the kitchen of Sally Hayes

Ingredients

  • 1/2 lb sharp cheddar cheese, grated
  • 1 stick margarine, softened
  • 1/2 tsp salt
  • Heavy pinch of cayenne pepper
  • 1 1/2 cups flour, sifted
  • 12 oz Spanish olives stuffed with pimientos

Instructions

  1. Cream together the cheese and margarine.
  2. In a separate bowl, add salt and cayenne pepper to the sifted flour and blend.
  3. Add the cheese mixture to the flour mixture and stir until smooth.
  4. Drain the olives and cover each with a pinch of dough; roll until smooth.
  5. Freeze the olives until hard.
  6. When ready to serve, preheat oven to 400°F.
  7. Place the frozen olives on a greased cookie sheet and bake for 15 minutes until hot.
  8. Serve immediately.
Yields approximately 130 olives.
