Potato Soup

From the kitchen of Sally Hayes

Ingredients

  • 6 large potatoes, peeled and quartered
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 6 cups chicken broth
  • 2 Tbsp butter or margarine
  • 2 Tbsp flour
  • 3 cups milk
  • 1/2 tsp salt
  • Grated cheddar cheese for topping
  • Real bacon bits for topping

Instructions

  1. Cook potatoes, onion, and celery in chicken broth until potatoes are tender.
  2. Mash some of the potatoes against the side of the pot to help thicken the soup.
  3. In a separate pan, melt the butter, whisk in the flour to make a roux, then stir in the milk.
  4. Combine with the potato mixture, season with salt, and simmer until thickened.
  5. Serve topped with grated cheddar cheese and bacon bits.
Card header lists both "Apple Tea Cake" and "Potato Soup" as titles, but only the Potato Soup recipe body appears here - Apple Tea Cake recipe not yet found. Instructions from "...Cook potatoes, onion, and celery in chicken broth" onward were reconstructed using standard potato soup technique (not verbatim from the card) - Matt approved filling this in with best judgment since the original text was cut off.
