Pound Cake

From the kitchen of Williams-Sonoma Kitchen (clipping, via Sally Hayes)

Ingredients

  • 3 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups (185g) cake flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 12 Tbsp (1 1/2 sticks/185g) unsalted butter
  • 1 cup (250g) sugar
  • 1/3 cup (80ml) milk

Instructions

  1. Have all ingredients at room temperature.
  2. Preheat oven to 350°F; grease and flour a 1 1/2-lb loaf pan.
  3. Whisk eggs and vanilla together; in a separate bowl sift together flour, baking powder, and salt.
  4. Beat butter on medium-high speed until light and creamy, about 3 minutes.
  5. Gradually add sugar and beat until light and fluffy, about 3 minutes.
  6. Add the egg mixture and beat on medium speed until combined, about 1 minute.
  7. Reduce speed to low and add the flour mixture in three additions, alternating with the milk, beginning and ending with flour; beat just until incorporated, do not overmix.
  8. Transfer batter to the prepared pan and smooth the top.
  9. Bake until deep golden and a toothpick comes out clean, 40-50 minutes.
  10. Cool in the pan 10 minutes, then invert onto a rack, turn right-side up, and cool completely.
Serves 8-10. Handwritten notes on the card: "Gold Loaf Pan, Very Good" and "Don't over cook."
