Prune Cake

Ingredients

  • 1 1/2 cups sugar
  • 3/4 cup Wesson oil
  • 3 eggs
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 2 cups self-rising flour, sifted
  • 1 1/4 tsp soda
  • 1 tsp nutmeg
  • 1 tsp all spice
  • 1 tsp cinnamon
  • 1 cup cooked prunes
  • 1 cup chopped nuts (pecans)
  • for glaze: 1 cup white sugar
  • 1/2 cup buttermilk
  • 1/2 tsp soda
  • 1 tsp vanilla
  • 1 Tbsp white corn syrup
  • 1 stick butter or margarine

Instructions

  1. Grease and flour a large oblong baking pan (10x14).
  2. Beat eggs and add sugar; mix.
  3. Add Wesson oil and remaining dry ingredients together with prunes and nuts at the end of mixing.
  4. Bake at 325° for 40 minutes.
  5. Make the glaze while the cake is baking: combine all glaze ingredients in a saucepan and bring to a boil.
  6. Pour over the cake in the pan while the cake is still hot.
