Reuben Dip

Ingredients

• 8 oz cream cheese, softened
• 1 1/2 cups corned beef, diced or chopped
• 1 1/2 cups Swiss cheese, shredded (divided)
• 1/2 cup sour cream
• 1/2 cup sauerkraut, drained
• 1/4 cup Thousand Island dressing
• 2 Tbsp chopped parsley
• cooking spray

Instructions

1. Preheat oven to 425°.
2. Coat a small baking dish with cooking spray.
3. Combine cream cheese, corned beef, 3/4 cup of the Swiss cheese, sour cream, sauerkraut, and Thousand Island dressing in a bowl; stir until blended.
4. Spread the mixture in an even layer in the dish.
5. Sprinkle with the remaining 3/4 cup cheese.
6. Bake 15 to 20 minutes or until cheese is browned and bubbling.
7. Top with parsley.
8. Serve with party rye bread or Lenny dip chips.
