Sausage-Cheddar Quiche

From the kitchen of Southern Living (via Sally Hayes)

Ingredients

  • Pastry for a 9-inch quiche pan
  • 1 lb sausage, or hamburger and sausage combined
  • 1 (4 oz) can sliced mushrooms, drained
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 tsp minced parsley
  • 1/2 tsp basil
  • a dash of granulated garlic
  • 1/8 tsp salt
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 eggs
  • paprika

Instructions

  1. Spray the quiche pan with Pam and line with pastry; trim excess pastry and crimp the edges.
  2. Place a piece of buttered aluminum foil, buttered side down, over the pastry and press into the shell.
  3. Cover with a layer of dried beans.
  4. Bake at 400° for 10 minutes; remove beans and foil, prick the shell, and bake 3-5 additional minutes until lightly browned.
  5. Cool.
  6. Cook sausage until browned; drain.
  7. Combine sausage with the next 7 ingredients (mushrooms through salt).
  8. Spoon into the quiche shell; top with cheese.
  9. Combine milk and eggs, beating until foamy, and pour evenly over the cheese; sprinkle with paprika.
  10. Bake at 325° for 50 minutes or until the cheese is lightly browned.
Serves 4-5.
