Spinach-Pecan Salad

From the kitchen of Kathy Moss (magazine clipping, via Sally Hayes)

Ingredients

  • 1 Tbsp butter or margarine
  • 1/2 cup pecan halves
  • 1 Tbsp brown sugar
  • 1 (6 oz) package fresh baby spinach
  • 1 large Granny Smith apple, thinly sliced
  • 1/2 cup crumbled blue cheese
  • 2 Tbsp olive oil
  • 2 Tbsp white vinegar

Instructions

  1. Melt butter in a small skillet over low heat; add pecans and brown sugar.
  2. Cook, stirring constantly, 2 to 3 minutes or until caramelized.
  3. Cool on wax paper.
  4. Place spinach in a large serving bowl.
  5. Toss in pecans, apple, and blue cheese.
  6. Add oil and vinegar, tossing gently to coat.
Makes 4 servings. Prep 10 min, cook 3 min. "Runner Up" recipe from a magazine contest; clipping notes it was Kathy Moss's contribution to a family Thanksgiving challenge.
