Stuffed Cabbage

Ingredients

  • 1 can shredded sauerkraut
  • 1 large green cabbage
  • 2 medium onions
  • 1 large can tomatoes
  • 3 stalks celery
  • 1/2 lb ground beef
  • 1/2 lb ground pork
  • 4 Tbsp chicken fat
  • 1 egg
  • 1/4 cup rice, uncooked

Instructions

  1. Clean and separate large cabbage leaves.
  2. Let stand in scalding water until slightly wilted, about 5 minutes.
  3. Mix the meats with finely chopped onion, rice, egg, salt, and pepper.
  4. Make small balls and roll in each cabbage leaf.
  5. Hold together with picks.
  6. Place in a deep kettle.
  7. Chop more cabbage, onion, and celery and place on the cabbage rolls.
  8. Then add the sauerkraut and tomatoes.
  9. Add more salt and pepper and top with chicken fat.
  10. Start on high, then reduce to cook for 2 hours.
  11. Add water if it gets dry.
Card notes it's good with mashed potatoes and a salad of pickled beets, hard-boiled eggs, and onion rings.
