Two Cheese Linguine

From the kitchen of Sally Hayes card

Ingredients

  • 1 (7 oz) package linguine
  • 2 Tbsp butter
  • 3 Tbsp flour
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 1/2 cups milk
  • 3/4 cup (3 oz) shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • 2 Tbsp lemon juice

Instructions

  1. Cook linguine according to package directions.
  2. In a skillet over low heat, melt butter.
  3. Stir in flour, salt, and pepper until smooth.
  4. Gradually stir in the milk and cook, stirring constantly, until thickened and bubbly.
  5. Remove from heat; stir in the mozzarella and Parmesan cheeses until melted.
  6. Stir in the lemon juice.
  7. Toss with the cooked linguine.
Card's instructions are cut off partway through; the final steps (stirring in milk, melting the cheeses, adding lemon juice, and tossing with the pasta) were reconstructed to best judgment from the ingredient list and standard method for this type of cheese sauce.
